Cinnamon Roll French Toast Casserole

I remember growing up and getting smacked in the face with cinnamon as soon as you got out of bed.  The number of cinnamon rolls I ate out of a can is probably immeasurable and there was ALWAYS a fight for the middle one.  Anybody else have this same fight?

Anyway, as we know better we try to do better.  Are canned cinnamon rolls the best for us? No.  Are they amazing? Yes.  I’ve changed up a basic online recipe to be a little healthier while still being a breakfast the kids get excited for.

By sneaking in flax seed, chia seed, and additional protein, this casserole will have 39 grams of protein and 16 grams of fiber.  My three kids will eat the entire thing, so I’d guess it’s about 13 grams of protein and more than 5 grams of fiber per serving.  That’s not counting whatever your rolls have in them =)

Ingredients:

  • Can of cinnamon rolls – any works, Annies has a healthier option
  • 3 eggs
  • 1/4 cup milk or almond milk
  • 1 tsp of vanilla
  • 1 T ground flax seed
  • 1 tsp chia seeds
  • 1 scoop protein – the protein we use has 2 scoops as a serving, so depending on brand, its 1/2 of serving
  • cooking spray – we use an organic coconut oil
  • 11×7 pan – I use a glass pan
    ingredients

Directions

  1. Preheat oven to 350 degrees.
  2. Grease your pan with a nonstick spray or butter
  3. Cut up each cinnamon roll into 4-6 pieces and distribute evenly in the dish. I use kitchen scissors.cut up cinnamon rolls
  4. In a separate bowl, mix eggs, milk, vanilla, flax seed, chia seed, and protein until combined. egg mix
  5. Poor over cut up cinnamon rolls.  egg over cinnamon rolls
  6. Bake for 21-24 minutes.  Cooking times may very due to what pan you bake in. finished baking
  7. Optional: Drizzle frosting over the top when pulled out of the over – I compromise and use half half the frosting
  8. ENJOY!

This is a weekend breakfast we make frequently and I hope you enjoy it as much as our family does!!!

The Journey Begins

Moms are definitely some of the undervalued heroes of our world.  You fall and skin your knee, you look for Mom.  You need help with your homework, ask Mom.  You want to bring a birthday treat to school, tell Mom and she’ll know if you have to bring in peanut free snacks or need an extra gluten free one.  Mom’s help with picture day outfits, playdates, sport schedules, snack, meals, more snacks, grocery store runs, never ending laundry and somewhat attempting to keep the house picked up.  Dads are capable and some do take on the mental load of these things, but most of the time, it’s all in Mom’s head.

Because I’m one of those Moms trying to keep it all straight and do the best I can, I’m always looking for help.  After all, it takes a village, right?!

I love learning from other Moms.  We all learn from experience and truth be told, I’d rather learn from yours because my schedule is a little b-a-n-a-n-a-s at the moment =)  Whether it’s an easy crockpot meal, an amazing deal going on, a delicious healthy alternative, an age appropriate outfit that doesn’t make me look like a Mom or some beauty product that will help me look less “I have three kids on 6 teams, a husband that travels a lot while I still work a full time job and two side hustles,” I’m in!

We all have tips to share that can help other Moms and THAT is why I’m starting a blog!

Thanks for joining me!
